Let me tell you a story

Hello there!

I'm Chris and my brother here is Ben and when our forces combine we are Hill Street Distillers - the little distillery with a lot of spirit.

One evening on the Yorke Highway, returning from adventures out West, buoyed by good waves and good times, the talk quickly turned to how we should do this more often and how we could make it happen.  While this is not too dissimilar to other conversations had on a return from a journey out West, this time we had a plan that wasn't flimsy. 

For 20 years or so, among other things, we had immersed ourselves in the fine art of home brewing. It was just a natural progression to put our science and technology degrees to better use and dabble in the darker arts of alcohol infusions and distillation. 

This was the answer - we were going to introduce Hill Street's finest gin to the Universe. We were going to work for ourselves - and have fun doing so. We would enforce a down-tools policy whenever the surf was firing and the fish were biting.  And when tools were in-hand, only the very finest of hearts would flow from our stills and into the glasses of the thirsty.

Fast forward a few years and we haven't quite realized our utopia but we are having a great time chasing it.
